Tucked behind the neo-Gothic Votivkirche church in the smart 9th district, Alsergrund, Aspic is making waves, with its daring Spanish chef, Borja, hailing from foodie San Sebastián, and stripped-back Scandi look, with white walls, blonde wood and clean contours. On paper the offer is deceptively simple: tapas and wine. But Borja adds a touch of magic. The Viennese are coming for explosive flavours in season-spun, ingredient-led, beautifully composed small plates like pork belly with kimchi, quince and radicchio and goat’s cheese with wild herbs, pomegranate and roasted veg. These are expertly matched with natural wines. And if you’re unsure what to order, just ask. The intimate Schanigarten (terrace) is the go-to when the weather is fine.
